How to Get a Reservation at Cervo's NYC (2026 Guide)

Key takeaways
- 1.Cervo's books on Resy, roughly two weeks out. The exact window and release time have changed, so check the furthest bookable date on Resy before you plan an alarm.
- 2.Indoor seats are bookable, but Cervo's holds room for walk-ins every night. The bar is the best walk-in bet. Arrive at the 5:30 PM opening.
- 3.Cancellations show up late. When tables come back for dates Quenelle members watch, it's usually the day before.
- 4.The outdoor seats on Canal Street are walk-in only and run April through October, so the season is about to end.
Cervo's has been open since 2018 and it's still one of the harder small tables downtown. It's a narrow, tiled room at 43 Canal Street, where Chinatown runs into the Lower East Side, with fried shrimp heads, a famous lamb burger and natural wine. The Infatuation gives it a 9.0, and Michelin gives it a Bib Gourmand.
Getting Cervo's reservations is less about winning one big drop and more about understanding three overlapping ways in: a Resy window of about two weeks, walk-in seats held back every night, and cancellations that tend to appear at the last minute. Here's how each one works.
Cervo's Reservations: How the Booking System Works
Cervo's books only through Resy. The rules, as best as they can be confirmed in October 2026:
- A roughly two-week window, with conflicting details. Cervo's Resy page says reservations open 14 days ahead at noon. When we checked the live Resy calendar in April 2026, it was releasing on a rolling 12-day window at midnight. Third-party trackers report 13 days. The restaurant doesn't publish a release time on its own site. The practical fix: open Resy, find the furthest date you can book, and that tells you the current window. Then check at both midnight and noon on the day your date should appear.
- Indoor seats are bookable every night, year round. The restaurant also says it saves room for walk-ins.
- Outdoor seating is walk-in only. It runs on Canal Street from April through October, 5:30 to 10 PM. As I write this in late October, it's in its last week or so.
- Hours: every night, 5:30 to 11 PM.
When Resy shows a date as sold out, that only covers the bookable tables. The walk-in seats are separate, and that matters for everything below.
How to Get a Table at Cervo's, Ordered by Reliability
1. Walk in at 5:30 PM and ask for the bar
The most dependable way into Cervo's is to be at the door when it opens. The bar is largely held for walk-ins, and it's where regulars would rather sit anyway: you're closest to the kitchen and the action, and you can ask what's best tonight.
Arrive at 5:30 PM as a pair and you have a good chance of sitting down quickly. Arrive at 8 PM on a Saturday and you'll be told to come back later. The Infatuation's reporting describes waits of an hour or two on busy nights, and longer on weekends. If you can't do early, the other window is after about 9:30 PM on a weeknight, when the first wave has cleared.
While the weather holds, the outdoor tables on Canal Street are walk-in only too. They're a better bet than the room on a warm night.
2. Catch a last-minute cancellation
Cervo's cancellations come back late. Of the Cervo's dates Quenelle members have watched, about one in three saw a bookable table reappear, and the typical opening came one day before the date. That fits a small room where a party of four becomes two or a group drops out the night before.
That's useful to know: if your date is sold out a week ahead, don't give up. The best chance comes the day before and the day of. Resy's "Notify" sends a group email, so the fastest person gets the table. A Quenelle watch checks around the clock and texts you within seconds, which makes a big difference when a table is only up for a few minutes.
3. Book when your date first appears
If you need a specific night, find the current window on Resy (see above) and be there when the date releases, at both possible times if you aren't sure. Have your party size set and your card saved. Early-evening and late tables last longer than 7:30 to 8:30 PM.
Book for two if you can. The room is narrow and elbow to elbow, as Michelin puts it, and four-tops are scarce.
4. Try the sister restaurants
The same team, Nick Perkins, Nialls Fallon and Leah Campbell, runs Hart's in Bed-Stuy and Eel Bar, a Basque-leaning bar a few blocks from Cervo's that holds its bars for walk-ins. If Cervo's is full, Eel Bar is the closest thing in spirit.
What Cervo's Actually Is
Cervo's opened in 2018, less than a year after Hart's, its sister restaurant in Bedford-Stuyvesant. The cooking draws on the coastal food of Spain and Portugal: small plates of seafood, a short list of larger dishes, a natural wine list and vermouth.
What to order:
- Fried shrimp heads. Crunchy, salty and the dish The Infatuation leads its review with. Order them first.
- The lamb burger, the same one served at Hart's, topped with anchovy in the version The Infatuation describes.
- Clams cooked in vinho verde, fried squid and sea bream cooked on the plancha, all of which Michelin singles out.
- Vermouth to start, then a bottle from the natural list.
Resy lists it at two dollar signs, and the Bib Gourmand is Michelin's award for good cooking at moderate prices. It's not cheap, but for this neighborhood and this level of cooking, it's fair.
Is Cervo's Worth It?
Yes. Cervo's isn't a hype room. It's a restaurant that has been consistently excellent for years, and it gets busy because people go back. The Infatuation calls it reliable, which it means as high praise, and I agree.
The tradeoffs are comfort and noise. It's small, hazy from the plancha and cramped, and it's loud when it's full. It's great for two people at the bar and less great for a quiet conversation or a party of six.
When to Skip Cervo's and Book Somewhere Else
If you need a guaranteed table for four on a Saturday, don't build the night around a Cervo's cancellation. Book something confirmed and keep a watch running. Good options nearby:
- Eel Bar, from the same team, is a few blocks away, with walk-in bar seats and dinner reservations.
- Lei, on Doyers Street in Chinatown, is a candlelit wine bar with a great short rib and many walk-in seats. See our Lei guide.
- Hart's, in Bed-Stuy, has the same lamb burger and the same natural wine, and it's worth the trip to Brooklyn.
The Black Label Burger alone justifies the trip. One of the great rooms in the city.
Danny Meyer's flagship for a reason. Thirty years of consistent excellence.
Classic American food, legendary murals, old New York atmosphere.
Rustic Italian that punches as hard as anywhere in the city.
The lasagna for two is a NYC classic at this point.
Tuscan cooking that feels genuinely transportive. Expect 90-minute waits on busy nights.
Outstanding natural wine program paired with pasta that rivals the neighborhood’s best.
Frequently Asked Questions
Cervo's: What I'd Do to Get a Table Tonight
If I wanted Cervo's tonight, I'd be at 43 Canal Street at 5:30 PM with one other person and ask for the bar. If the outdoor tables were still out and the night was warm, I'd take one of those.
For a specific night, I'd open Resy now to find the furthest bookable date, which tells me the current window. Then I'd set a Quenelle watch on my date and keep an eye on my phone the day before, when Cervo's tables most often come back. If none of that worked, I'd walk over to Eel Bar and take a seat at the bar.
